Instant Pot Sweet Honey Teriyaki Chicken

You guys sick of me yet? Basically my Instant Pot gets more love than any other appliance in my kitchen! I use it so much. I haven’t busted my crockpot out in ages (and after the promo for This Is Us, I don’t think I will!). This is a creamy, sweet, tangy Teriyaki chicken that goes great over rice or even on a salad! I had a recipe but tweaked it for my own liking and we loved the result! Enjoy!

  1. 2-3 big boneless skinless chicken breasts
  2. 1/2 c. soy sauce (low sodium if you prefer)
  3. 1/2 c. honey
  4. 1/4 c. vinegar
  5. 2 garlic cloves, pressed or minced
  6. 1/2 tsp ground ginger
  7. 1/3 c. brown sugar
  8. 1/2 c. water, divided
  9. 3 tbsp cornstarch
  1. In the Instant Pot, add chicken.
  2. In a small bowl, mix together soy sauce, honey, vinegar, garlic, ginger, brown sugar, and 1/4 c. water. Mix until combined.
  3. Pour over chicken.
  4. Replace lid. Cook manual HIGH for 20 minutes. Natural release.
  5. Remove chicken and shred.
  6. While chicken is removed, mix 1/4 c. water and cornstarch in a bowl and then add to teriyaki sauce in pot.
  7. Use saute mode and mix in cornstarch mixture until bubbly and thick.
  8. Turn off pot and add chicken and stir to combine with sauce.
  9. Serve over rice.

    1. You shouldn’t have to add more water! Just adjust the time a bit. I usually add 10 or so minutes if they are frozen. Once it is done, if it isn’t done I stick the lid back on and cook another 5 minutes.
