Instant Pot Honey Bourbon Chicken

I’ve recently broke out my Instant Pot again! It sat on the shelf for a while. But thankfully, it has made its appearance again! And this one may be my favorite yet! It is saucy and so tasty and easy! You will thank me later! I’m not entirely sure what ingredient replaces the bourbon, but it tastes incredible! Give this a go and it may become your favorite too! Enjoy!

Instant Pot Honey Bourbon Chicken

  1. 3-4 boneless, skinless chicken breasts
  2. Salt and pepper, to taste
  3. 1/2 c. soy sauce
  4. 1/4 c. ketchup
  5. 2 tbsp vegetable oil
  6. 2 garlic cloves
  7. 1 c. honey
  8. 2 tbsp. cornstarch
  9. 1 tbsp. water
  1. Place all the ingredients except for water and cornstarch in Instant Pot.
  2. Lock cover into place with toggle switch on Sealing.
  3. Cook chicken on manual HIGH for 15 minutes if chicken is thawed, 30 if it is frozen.
  4. Naturally release pressure for 5 minutes and then do a quick release.
  5. Remove chicken and shred.
  6. Set Instant Pot on saute.
  7. In a bowl, combine cornstarch and water.
  8. Add cornstarch mixture and chicken into pot and continue to cook for 2-3 minutes until thickened.
  9. Serve with rice.
