Grilled Huli Huli Chicken

I think I may be trying to hold on to the last bit of warmer weather! Don’t get me wrong. Fall is my favorite! But I am definitely taking advantage of the lingering 50’s and 60’s! They will be gone next week, but that doesn’t mean I can’t use my grill! I actually use it all year round.  But this recipe is perfect for any season.  It is sweet and with it marinated for so long, it is tender and juicy! Enjoy!

Grilled Huli Huli Chicken

  1. 1/2 cup pineapple juice
  2. 1/2 cup brown sugar
  3. 1/3 cup ketchup
  4. 1/3 cup soy sauce
  5. 1/4 teaspoon ground ginger
  6. 2 cloves garlic, minced
  7. 2 lbs boneless, skinless chicken breasts
  1. In a small bowl, mix the first six ingredients.
  2. Pour marinade in a large resealable plastic bag and add chicken. Seal the bag and place in the fridge for at least 8 hours or overnight.
  3. Remove bag from fridge, drain and discard marinade from chicken.
  4. Grill chicken over medium high heat for 6-8 minutes on each side or until internal temperature of chicken reaches 165 degrees F.
