Instant Pot Beef Stew

Who is ready for cooler weather!? I know I am! Something about the leaves changing, cooler weather, and fires…bring it on! If I could lengthen out fall for just a little longer, that would be my dream! To usher in the cold, I have a perfect Instant Pot stew for you! I threw it in when I got home from church and it was done in 40 minutes.  Granted, that was with the meat thawed out already! But still…you just can’t beat that! Enjoy!

Instant Pot Beef Stew

Ingredients
  1. 1 lb. stew meat, or 1 roast, trimmed of fat and cut into bite size pieces
  2. 3 potatoes, peeled and diced
  3. 3-4 carrots, peeled and sliced
  4. 1 can corn, drained
  5. 1 can tomato soup
  6. 1 can water
Instructions
  1. Place all ingredients in Instant Pot.
  2. Stir to combine.
  3. Place lid on and either do HIGH manual for 35 minutes or use the MEAT/STEW button.
  4. Quick release once it is done.
Notes
  1. The water isn't an exact measurement. I filled the tomato soup can with water and just used that.
