Instant Pot Creamy Chicken and Black Bean Nachos

If you haven’t figured out a theme yet, we LOVE nachos. I think that is half of the recipes on here!  But nothing is more comforting than a big plate of nachos.  And these are perfect.  They are creamy but still have a zing to them!  You will love these. And with them being in the Instant Pot, it makes dinner even easier! Enjoy!

Instant Pot Creamy Chicken Black Bean Nachos

  1. 4 boneless, skinless chicken breasts
  2. 1 (15 oz) can black beans, rinsed and drained
  3. 1 (15 oz) can corn, drained
  4. 1/2 c. salsa
  5. 2 tbsp taco seasoning
  6. 1 c water
  7. 1 pkg (8 oz) cream cheese
  1. Put chicken in Instant Pot. Sprinkle taco seasoning and water over chicken.
  2. Add black beans, corn and salsa.
  3. Cook on manual HIGH for 23-25 minutes.
  4. Natural release for 10 minutes, then quick release the rest.
  5. Take out chicken and shred. Place back in Instant Pot.
  6. Add cream cheese to Instant Pot and add lid to soften the cream cheese.
  7. After about 5-10 minutes, remove lid and stir in cream cheese until no more clumps.
  8. Eat over chips.
  1. You can eat these any way you like. Chips, rice, tortilla. Get creative.
