Chicken Cordon Bleu Casserole

Don’t let the word “casserole” deter you!  I know it can kind of be a taboo word  in the kitchen, but this is fantastic!  So yummy, creamy, and perfect! Enjoy!

  1. 6 tbsp butter
  2. 2 1/2 c. uncooked pasta
  3. 1 tbsp oil
  4. 2-3 minced garlic cloves
  5. 1/2 (8 oz) pkg. cream cheese, room temperature cut into cubes
  6. 1 1/2 c. half and half
  7. 1 1/4 c. finely grated Parmesan cheese
  8. 2 tbsp chopped parsley, fresh or dried
  9. 1 tsp dijon mustard
  10. 1 1/2 c. diced cooked chicken
  11. 1 c. diced ham steak
  12. 1 c. mozzarella or swiss cheese
  13. 1/3 c. plain bread crumbs
  1. Preheat oven to 375 degrees. Spray a 9x9 baking dish.
  2. Cook pasta according to directions, until al dente.
  3. Drain pasta, reserving 1/2 c. of pasta water, and put pasta in a bowl.
  4. Add the oil and toss to coat. Set aside.
  5. While pasta is cooking, in a large saucepan, melt 4 tbsp butter over medium heat.
  6. Add garlic and cook for 1-2 minutes.
  7. Add cubes of cream cheese and allow them to melt.
  8. Very slowly whisk in the half and half and the 1/2 c. parmesan cheese.
  9. Bring to a light simmer.
  10. Stir in 1 tbsp parsley, mustard, chicken, and ham.
  11. Simmer for 5 minutes.
  12. Whisk in up to 1/4 c. of the reserved pasta water if you need to thin the sauce.
  13. Add the noodles to the sauce and toss to coat, then transfer half the mixture to the prepared baking dish. Sprinkle with cheese and then add remaining pasta on top of cheese.
  14. In a microwave, melt remaining 2 tbsp butter. Stir in the bread crumbs and remaining 1 tbsp parsley.
  15. Sprinkle the bread crumb mixture over the pasta, then sprinkle with the remaining parmesan cheese.
  16. Cover with aluminum foil and bake for 15 minutes.
  17. Remove foil and bake for 10 more minutes, or until top is lightly golden brown.
