Instant Pot Cheesy Bacon Potatoes

This was a trial and error recipe that turned out great.  I had a recipe for it, but I didn’t have some of the stuff.  I took what a I had and did my own thing.  It was so yummy.  I was a little hesitant to do potatoes because it doesn’t take a lot of water, but these really did turn out great.

  1. 4-5 red potatoes, cleaned and diced
  2. 3 bacon strips, diced
  3. 1 pkg Ranch dressing mix
  4. 3/4 c. shredded cheddar cheese
  5. 1/3 c. mayo
  6. 1/3 c. sour cream
  1. Place diced potatoes, bacon, ranch dressing mix, and 3 tbsp water in the instant pot.
  2. Replace the lid and on manual high heat, cook for 5 minutes.
  3. Natural release for 5 minutes and then quick release the rest.
  4. Add cheese, mayo and sour cream and mix until fully incorporated.
