Chewy Chocolate Chip Cookies

If you know me, or look at the posts at all, you know I love cookies.  Like, LOVE them! They are my downfall.  Who doesn’t love a warm, gooey, chocolatey, straight out of the oven cookie!?  Well, here is another fabulous one for you!  It is fantastic and these were gone in no time flat!  Enjoy!

  1. 2 c. all purpose flour
  2. 1/2 tsp baking soda
  3. 1/2 tsp. salt
  4. 3/4 c. butter, melted and slightly cooled
  5. 1 c. packed brown sugar
  6. 1/2 c. white sugar
  7. 1 tbsp vanilla extract
  8. 1 egg
  9. 1 egg yolk
  10. 2 c. semi sweet chocolate chips
  1. Preheat oven to 325 degrees. Line cookie sheet with parchment paper.
  2. Sift together flour, baking soda, and salt. Set aside.
  3. In a medium bowl, cream together melted butter, brown sugar, and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using wooden spoon. If your butter was still hot when you added it, your dough may be really wet. If that i the case, let it rest at room temp for a couple of minutes and then it will be cool enough to scoop into cookies.
  4. Roll scant 1/2 c. dough into a ball. Holding dough in fingertips of both hands, pull apart into two equal halves. Rotate halves 90 degrees and with jagged surface facing up, place formed dough onto cookie sheet. If you want, you can just scoop the dough and make it tall than it is wider.
  5. Bake for 11-14 minutes, or until edges start to harden but middles are puffy and soft. Do NOT over bake!
  6. Cook cookies on sheets until able to lift without breaking. Transfer to wire rack.
