Tex-Mex Breakfast Bowls

This recipe was kind of an accident.  Like, I hadn’t gone grocery shopping in a long time and this was all I had left!  It was delicious and could be a meal prep thing!  Make a bunch and divide them up into bowls and warm up during the week!  Super simple! Enjoy!

  1. 1 small red potato, diced
  2. 2 eggs
  3. Pico de Gallo
  4. 1 tbsp oil
  5. Shredded Cheddar cheese
  1. In a small skillet, fry the diced red potato in the oil on medium heat. Cook until cooked through and crispy. Remove from skillet and place in a bowl.
  2. In the same skillet, scramble the eggs on medium heat.
  3. Just before the eggs are done, add shredded cheese and let melt.
  4. Remove eggs from skillet and top on to the potatoes.
  5. Sprinkle with pico de gallo as much as is desired!
