Chicken Lettuce Wraps

Hopefully this recipe doesn’t confuse you.  It all throws together so easily and is so yummy! I got this recipe in an exchange I did with some friends.  It is a fantastic idea and you all should do it! I got so many good ones!  Enjoy!

For the Stir Fry
  1. 3 tbsp. oil
  2. 2 boneless skinless chicken breasts, cooked
  3. 1 can water chestnuts; drained
  4. 2-3 cloves garlic, minced
  5. 2/3 c. mushrooms, diced
  6. 1 head Boston Bibb lettuce
For Special Sauce
  1. 1/4 c. sugar
  2. 1/2 c. water
  3. 2 tbsp. low sodium soy sauce
  4. 2 tbsp. rice vinegar
  5. 2 tbsp ketchup
  6. 1 tbsp lemon juice
  7. 1/8 tsp sesame oil
  8. 1 tbsp dijon mustard
  9. 1-2 tsp Sriracha chili sauce
For Stir Fry Sauce
  1. 2 tbsp soy sauce
  2. 2 tbsp brown sugar
  3. 1/2 tsp rice vinegar
Instructions
  1. In a small bowl, dissolve sugar in water to make special sauce. Add soy sauce, rice vinegar, ketchup, lemon juice, dijon mustard, chili sauce, and sesame oil. Mix well and refrigerate until you're ready to serve.
  2. To make the stir fry sauce, mix soy sauce, brown sugar, and rice vinegar in a small bowl and set aside.
  3. Bring 2 tbsp oil to high heat in a large frying pan. Cut the chicken into small bite sized pieces and mince the water chestnuts and mushrooms if using. Once the oil is heated to high heat, add the chicken, garlic, water chestnuts, and mushrooms to the pan. Add the stir fry sauce to the pan and saute the mixture for a couple of minutes then serve it in the lettuce cups.
  4. Top with special sauce or use it as a dipping sauce.
