To start off, I am a HUGE fan of scotcheroos! Like, big time! Put these little things into bite sized heaven?? I am in! I made these for goodie plates during Christmas time. I did goodie plates, mostly to get them out of my house! Because I kept eating them. I ate way more than I would like to admit! Not a single regret! You won’t either, I swear! Enjoy!
Scotcheroos Millionaire Nuggets

- 1 c. corn syrup (light Karo Syrup)
- 1 c. sugar
- 1 c. peanut butter
- 4 c. Rice Krispie Cereal
- 6 oz. milk chocolate chips
- 6 oz. butterscotch chips
In a saucepan over medium heat, stir the corn syrup and sugar together. Allow to cook, stirring occasionally until clean and the sugar is totally dissolved. Add the peanut butter and stir until smooth. In a large bowl, add the cereal and pour the peanut butter mixture in. Gently fold to combine and set aside to cool for 5-10 minutes. Lay parchment paper on a cookie sheet and begin rolling the cereal into balls. Set on cookie sheet to cool completely. Meanwhile, in a glass bowl, melt the chocolate and butterscotch until smooth. One at a tim, drop the balls into the chocolate, and using fork, roll around to coat it and the lift it out and tap the sides gently, allowing the excess chocolate to run off. Place on the cookie sheet and store in a cool place to allow the chocolate to set up. Store in air tight containers.
